Warm ginger and wasabi add warmth to this savoury and sweet granola. Think of this as a milder version of wasabi peas—perfect for snacking!

Method

In small saucepan, cook honey, oil, wasabi, ground ginger and salt over medium heat, whisking, just until honey is beginning to melt, about 2 minutes.

In large bowl, combine oats, apricots, cranberries, pepitas, sunflower seeds, crystallized ginger and sesame seeds. Stir into honey mixture to coat. Scrape onto parchment paper–lined large rimmed baking sheet. Bake in 325°F oven, stirring once, until beginning to brown, about 25 minutes. Let cool completely, about 20 minutes. Break into pieces. (Make-ahead: Store in airtight container for up to 2 weeks.)

Makes about 8 cups.
